Food Blog: The Very Best Mac & Cheese Recipe

I’ve been working on this recipe for quite some time.  After trying many different cheese combinations I’ve come up with this winner:

1 Triangle Brie cut into chunks

2 Cups Muenster cubed

3 Cups Sharp Vermont Cheddar shredded

2 Cups of Half & Half or Light Cream

2 Cups Whole Milk

1/2 Stick of Butter

1/4 Cup Flour

Fresh Cracked Pepper to Taste

1 Cup Seasoned Croutons

Pasta of your choice (I sometimes use egg noodles)

Melt Butter in large sauce pan on low heat.  Add flour and stir until it forms a roux.  Cook over low heat for 3 minutes.  Slowly add half & half while whisking flour mixture.  Continue whisking as you add Muenster and cheddar.  Slowly add milk and chunks of Brie.  Continue stirring on low heat until all the cheese has melted.

Cook pasta in boiling water until al dente.  In the meantime spray a large casserole dish with extra virgin olive oil until fully coated.  Place croutons in a large zip lock bag and crush with a rolling pin.  Drain pasta and pour into casserole dish.   Pour melted cheese mixture over pasta. Top with the crushed croutons.  Spray with olive oil. Bake in 350 oven for 30 minutes.

Serve with crusty French bread and fresh greens.
